These chocolate chip protein cookies are low fat, low sugar, high protein and gluten-free. Soft in the middle with golden edges with delicious melted chocolate chips throughout!
Ingredients:
- ¾ cup Chocolate Chips
- 1 Scoop Vanilla IsoWhey
- 1 cup Peanut butter
- ¾ Coconut sugar
- 2 Eggs
Method:
Preheat oven to 350F/175C. Line baking sheet with parchment paper.
In a large bowl, mix peanut butter, coconut sugar, protein powder and eggs.
Add chocolate chips and mix until combined. The dough shouldn’t look crumbly, if it is, add 1 to 1.5 teaspoons of coconut oil.
Spoon 2 tablespoons of dough into your hand to make balls.
Press it with the palm of your hand to flatten and form into a thick cookie. Place on the prepared baking sheet and repeat with remaining dough. You should get 13-14 cookies.
Bake for 12 minutes, remove from the oven. They will look undercooked, it’s normal. Now, let them cool for 15 minutes to give them time to set!
