What you need:
• Plant Nutrition Chilli Con Carne (100g)
• 460mL water, divided
• 400g Tin of Chopped Tomatoes
• 400g Tin of Red Kidney Beans, drained
• 125g Tin of Corn Kernels, drained
Cooking Instructions:
Step 1: Add Plant Nutrition Chilli Con Carne to a bowl with 210mL water. Stir and leave to absorb for 15-20 minutes.
Step 2: Heat 1 tablespoon olive oil in a non-stick pan over medium heat. Add the Chilli Con Carne mix and stir until heated through.
Step 3: Add Chopped Tomatoes, Red Kidney Beans, Corn Kernels and 250mL water and stir to combine. Simmer for 10 minutes until the water has absorbed.
Step 4: Serve with quinoa or rice and topped with fresh diced avocado and lime.
