It’s hard to muster up the motivation to cook in winter, especially if you’re eating a plant-based diet. It often takes a bit longer to source good vegan ingredients and cook up a hearty winter meal.
So, we thought we’d help you out with our favourite vegan winter warmer recipe, perfect for the whole family.
Here’s our go-to recipe for the best plant-based Chilli Con Carne you’ll ever have, thanks to Nourished Nutrition!
What you need…
Vegan Nourished Nutrition Chilli Con Carne (100g)
400g tin of chopped tomatoes
400g tin of red kidney beans
125g tin of corn kernels
Olive oil
Cooking instructions…
Step 1: Add Nourished Nutrition Chilli Con Carne to a bowl with 210mL water. Stir and leave to absorb for 15-20 minutes.
Step 2: heat 1 tablespoon olive oil in a non-stick pan over medium heat. Add the Chilli Con Carne mix and stir until heated through.
Step 3: Add 1 x 400g tin of chopped tomatoes, 1 x 400g tin red kidney beans, 1 x 125g tin corn kernels and 250mL water and simmer for 10 minutes until water has absorbed.
Step 4: Serve with quinoa or rice and topped with fresh diced avocado and lime.
